Bacon Apple Cheddar Corn Bread

INGREDIENTS:

½ c. cornmeal

1 ½ c. AP (all purpose) flour

½ c. sugar

1 tbsp. baking powder

1 c. milk or buttermilk

¼ c. melted butter

1 large egg

½ c. diced apples (peeled if wanted)

¾ c. shredded Cheddar cheese

½ c. chopped bacon, cooked and chopped

INSTRUCTIONS:

Preheat oven to 450°F. Using a non-stick spray oil, or butter, grease a 9-inch round baking pan or skillet. (I prefer the iron skillet). Combine the cornmeal, flour, sugar and baking powder in a large bowl, whisking to mix well.

With a mixer or a which in a larger bowl, beat/whisk the milk, butter and egg until well blended. Add the flour mixture and stir just till moistened. Fold in the apples, cheese and bacon. Pour the mixture into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 20-25 minutes. Cool in pan on wire rack or serve hot or warm, or have it for breakfast, snack or lunch with anything from chili, salad or my version of Canadian Style BBQ Beans!
