Set the oven to 350 F.
3 large or 4 small eggs (depending on size)
1 c. sugar
1 tablespoon orange juice
1 tsp. vanilla
Zest of 1 large orange (wash it well first)
1/3 melted butter
2 1/4 c. flour
¾ c. cocoa powder
1 tsp. baking soda
½ tsp. salt
½ c. slivered almonds
¾ c. chocolate chips
Egg white from one egg.
Crushes slivered almonds for topping
In your stand mixer or with a hand mixer, beat eggs with sugar till light in color. Add orange juice, vanilla and melted butter.
In separate bowl, mix the rest of the ingredients except the almonds and chocolate chips.
Mix well before adding the last two ingredients.
Form two logs approximately 2 ½ inch wide and 12 inches long on parchment paper on a cookie sheet.
Brush with slightly beaten egg white and sprinkle with crushed slivered almonds.
Bake for 25 minutes.
Remove from oven and let rest for 10 minutes.
Lower oven to 320 F.
Cut into ½ inch pieces and replace on baking sheet on the parchment paper sideways.
Bake for 10 minutes.
Turn over to the other side and bake the biscotti another 10 minutes.
