Original recipe from one of my most used and trusted recipe book, Joy of Cooking.

This recipe is always a winner at parties, men and kids seem to love it especially. I love them too, they are reminiscent of my childhood. I have made them so often for my brothers and dad, I could not begin to imagine how often.

They are quick to make, and fun to serve with ice-cream!

Butterscotch Brownies For a Crowd

Gives 48 pieces

Preheat oven to 350° F.

INGREDIENTS:

1 c. butter

4 c. brown sugar

4 eggs, slightly beaten

3 tsp. vanilla

2 c. flour

4 tsp. baking powder

1 ½. tsp. salt

INSTRUCTIONS:

Melt the butter in a medium sized saucepan, add the brown sugar and stir till dissolved and smooth.

Cool slightly, no more than a few minutes.

Add the vanilla and then eggs, beat into the mixture quickly.

Mix the flour, baking powder and salt together, then add to the butter and sugar mixture, still till well incorporated.

Line a 12 x 16-inch baking pan with parchment paper.

Pour in the batter and use a spatula to spread it evenly.

Bake for 25 minutes.

Remove from the oven and let it cool completely before cutting.

Place on a pretty plate and share, perfect picnic and BBQ dessert!

*To make the original recipe, cut the recipe by 4 and there is the option to add ½ to 1 cup chopped nuts or ¾ cup coconut. Bake in a 9 x 9-inch pan.
