Cranberry & Cream Cheese Muffins with Orange

INGREDIENTS:

1 c. butter, room temperature

1 package (250 g. or 8 oz.) cream cheese, room temperature

1 c. sugar

1 tsp. vanilla extract

Zest of one large orange

¼ c. juice of orange

4 eggs

2 ½ c. unbleached flour

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

2 c. fresh or frozen cranberries

2 bananas, mashed

INSTRUCTIONS:

Preheat oven to 400° F.

Use muffin liners or grease 2 12-muffin tins.

Cream together butter, cream cheese, sugar, vanilla, orange zest and juice. Beat till light in texture and color. Add eggs, one at a time, beating after each addition.

In separate bowl, combine all dry ingredients with whisk. Add gently to the wet mixture and beat till just combined, add cranberries and mashed bananas, mix again till just blended.

Place ½ a cup batter or so to each muffin tin to make approximately 24 muffins.

Bake for 20 minutes to till toothpick inserted in middle comes out clean. Let cool a few minutes before removing them from the tins to cool on wire rack.
