INGREDIENTS :
1 c. white sugar
1 tsp. baking powder
3 c. all-purpose flour
½ tsp. salt
1 c. cold butter
2 eggs, beaten
2 tsp. vanilla
6 c. fresh strawberries, sliced
3/4 c. white sugar
1/3 c. cornstarch
INSTRUCTIONS:
1. Preheat the oven to 375° F.
2. Lightly grease a large 10 x 12 pan.
3. In a medium bowl, stir together 1 cup white sugar, flour, baking powder and salt.
4. Add the eggs and vanilla to the flour mixture. Using a fork or a pastry cutter, cut the butter into the flour mixture. Work the dough until the pieces are very small. Dough will be crumbly. Pat half of the dough evenly into the bottom of the prepared pan.
5. In separate bowl, mix the cornstarch and ¾ cup sugar. Fold in the strawberries. Spoon the strawberry mixture evenly over the bottom crust.
6. Crumble the remaining dough over the strawberry filling layer.
7. Bake for 45 minutes or till top layer is golden.
8. If cutting into squares, refrigerate to cool before cutting.
9. Or, serve warm with ice cream. Major yum factor!
