Over time, it became well-rooted in our local farming traditions. Its production really took off in the 20th century, especially in regions like Montérégie, Lanaudière, and Chaudière-Appalaches. The asparagus season is short (mid-May to late June), making it both precious and eagerly anticipated.

Ingredients:

  • 1 bunch of Quebec asparagus

  • 4 baby potatoes, halved

  • 4 hard-boiled eggs

  • 1 tbsp Dijon mustard

  • 2 tbsp apple cider vinegar

  • 4 tbsp olive oil

  • Salt, pepper, chopped chives

  • Thinly sliced radishes

  • Fresh peas (Optional)

Instructions:

  1. Boil the potatoes in salted water until tender.

  2. Blanch the asparagus for 2–3 minutes, then plunge into cold water.

  3. Make the vinaigrette by whisking together mustard, vinegar, oil, salt, and pepper.

  4. Combine all ingredients, quarter the eggs and place in salad.

  5. Sprinkle with chives and sliced radishes and fresh peas

Ingredients:

  • 1 bunch of Quebec asparagus

  • Olive oil

  • Lemon zest

  • Grated Parmesan or crumbled feta

  • Fresh ground black pepper

Instructions:

  1. Preheat the BBQ or a grill pan.

  2. Brush the asparagus with olive oil and grill for 3–4 minutes.

  3. Top with cheese, lemon zest, and black pepper when serving.

Ingredients:

  • 1 sheet of puff pastry

  • 1 bunch of trimmed Quebec asparagus
