Strawberry season in Quebec is short but glorious — and when those juicy red berries are at their peak, there’s no better way to enjoy them than in this classic no-bake fresh strawberry pie. The filling is made entirely of uncooked strawberries, tossed in a simple, homemade strawberry glaze that holds it all together in the most delicious way.

This pie has become a summer ritual in our family. I first discovered a version of it at a roadside diner, where I bit into a slice of pie piled high with fresh berries, glistening under a sweet strawberry glaze. No canned filling, no baking the fruit — just fresh-picked flavor at its best. This is my take on that unforgettable pie, perfected over many summers.

Ingredients (Yields 2 pies)

  • 2 baked single pie shells (your choice of classic pastry or graham cracker crust)

  • 8 cups fresh strawberries, hulled and sliced

  • 2 cups pureed strawberries (use a blender or food processor)

  • 1 packet unflavored gelatin (such as Knorr)

  • 2 tablespoons cornstarch

  • 1½ cups granulated sugar

  • 1 teaspoon salt

  1. Make the glaze:
    In a medium saucepan, whisk together the sugar, gelatin, cornstarch, and salt. Stir in the pureed strawberries. Cook over medium heat until the mixture begins to bubble. Let it simmer for 2 minutes, stirring constantly to prevent sticking. Remove from heat and allow to cool to room temperature.

  2. Prepare the strawberries:
    While the glaze is cooling, hull and slice the fresh strawberries. Try to keep the pieces roughly the same size for even distribution in the pie.

  3. Assemble the pies:
    Pour the cooled strawberry glaze over the sliced berries and toss gently to coat. Divide the mixture evenly between the two baked pie shells.

  4. Chill and serve:
    Refrigerate the pies for at least 1 hour to allow the glaze to set. Serve chilled, topped with whipped cream or vanilla ice cream.
