🍋 Ingredients

For the Lemon Brownies:

  • 1 1/4 cup sugar

  • 3 lemons, zested and juiced (approx. 1/2 cup juice)

  • 1/2 cup butter (softened)

  • 1 tsp vanilla extract

  • 1 tsp lemon extract

  • 2 large eggs

  • 1/2 tsp salt

  • 1/2 tsp baking powder

  • 2 cups unbleached or all-purpose flour

For the Lemon Glaze:

  • 1 cup powdered sugar

  • 1 tbsp milk (adjust as needed)

  • 1 tbsp lemon concentrate

  • Pinch of salt

🧁 Instructions

  1. Prep Your Pan:
Line a 9x9 metal baking pan with parchment paper or grease well with butter and flour.

  2. Preheat the Oven:
Set your oven to 375°F (190°C).

  3. Make the Brownie Batter:
In a large mixing bowl, beat together the sugar, lemon juice, and softened butter until the mixture becomes light in color and fluffy.
Add the lemon zest, vanilla extract, lemon extract, and eggs. Beat for another 2 minutes until fully combined.

  4. Combine the Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Mix Everything Together:
Add the dry mixture to the wet ingredients all at once. Stir gently until smooth—do not overmix.

  6. Bake:
Pour the batter into your prepared pan and spread it evenly.
Bake for 25–30 minutes, or until the brownie gently springs back when pressed in the center.

  7. Cool:
Let cool in the pan for 30 minutes before transferring to a wire rack to cool completely.

🍋 Make the Glaze

In a small bowl, whisk together powdered sugar, milk, lemon concentrate, and a pinch of salt.
Adjust consistency as needed:

  • Too thick? Add a tiny splash of milk.

  • Too thin? Add more powdered sugar.

✨ Finish & Serve

Once the brownies are completely cooled, pour the glaze over the top and smooth with an offset spatula or spoon.
Top with spring sprinkles, candied lemon peel, edible flowers—or leave them plain and let the lemon shine!
